🍰 Simple Vanilla Sponge Cake



📝 Ingredients

  • 3 large eggs (room temperature)

  • 100 g granulated sugar

  • 100 g all-purpose flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1 tsp vanilla extract

  • 1/2 tsp lemon juice or vinegar

👩‍🍳 Instructions

1️⃣ Prepare the pan

  • Preheat oven to 170–180°C (340–350°F) .

  • Grease and line an 8-inch (20 cm) round cake pan with parchment paper.

2️⃣ Beat eggs & sugar

  • In a large bowl, beat the eggs on medium speed for 1 minute.

  • Add sugar gradually while beating.

  • Continue beating on high speed for 5–7 minutes until the mixture becomes pale, thick, and triples in volume .

  • Add vanilla extract and lemon juice/vinegar. Mix gently.

3️⃣ Add dry ingredients

  • Sift together flour, baking powder, and salt.

  • Fold the dry ingredients into the egg mixture in 2–3 additions using a spatula.

  • Fold gently to keep the batter airy. Do not overmix.

4️⃣ Bake

  • Pour batter into the prepared pan.

  • Tap the pan lightly to remove large air bubbles.

  • Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.

5️⃣ Cool

  • Let the cake cool in the pan for 10 minutes.

  • Remove from the pan and cool completely on a wire rack.
