🍰 Simple Vanilla Sponge Cake
📝 Ingredients

3 large eggs (room temperature)

100 g granulated sugar

100 g all-purpose flour

1 tsp baking powder
-
1/4 tsp salt
-
1 tsp vanilla extract
-
1/2 tsp lemon juice or vinegar
👩🍳 Instructions
1️⃣ Prepare the pan

Preheat oven to 170–180°C (340–350°F) .

Grease and line an 8-inch (20 cm) round cake pan with parchment paper.
2️⃣ Beat eggs & sugar

In a large bowl, beat the eggs on medium speed for 1 minute.

Add sugar gradually while beating.

Continue beating on high speed for 5–7 minutes until the mixture becomes pale, thick, and triples in volume .

Add vanilla extract and lemon juice/vinegar. Mix gently.
3️⃣ Add dry ingredients

Sift together flour, baking powder, and salt.

Fold the dry ingredients into the egg mixture in 2–3 additions using a spatula.

Fold gently to keep the batter airy. Do not overmix.
4️⃣ Bake

Pour batter into the prepared pan.

Tap the pan lightly to remove large air bubbles.

Bake for 25–30 minutes or until a toothpick inserted in the center comes out clean.
5️⃣ Cool

Let the cake cool in the pan for 10 minutes.

Remove from the pan and cool completely on a wire rack.
